Hi Karen,
With git for docs, you always have a copy of the original version by
checking out the merged version just prior to removal.

Agreed on the usefulness of the original published, and those guides that
are published at release time are available on the site.
I think we cover the scenarios you mention, but let me know if I'm missing
something.
