We (Inria/Orange Labs) launched this initiative a couple of years now and we have several research topics around Fog/Edge infrastructures. 
Moreover, you may find interesting tools we made to help researcher make scientific analyses (such as EnOs for instance: https://enos.readthedocs.io/en/stable/ )
