[Openstack] Backing up NFS

I am still thinking about many-times faster instance restore time when
having a NFS server outage if I would have kind of "snapshot" of an
instance that is stored on NFS instead of backuping the data and restoring
the instance itself.
Currently I have only one NFS available at the servers location, one is on
the other location.
Don't any of you backup the data directly from the NFS? Will the image be
neccessarilly corrupt if I copy it via FTP while the instance is running?
