Generally we try to use the tag: low-hanging-fruit for both openstack-manuals and openstack-api-site, here's the search results [1], about 25 of those in openstack-manuals and only 1 in openstack-api-site (and it's marked In Progress).

I also like to search for Triaged and Assignee:Nobody (meaning, it's not assigned). There are 75 of those, some of them are tagged low-hanging-fruit. [2].

Feel free to ask more questions about specific areas of interest. I've given multiple workshops on getting started in OpenStack. I found that investigating bugs by topic is as important as finding "simple" bugs, since simple to me is not always simple to you.
