In Chinese Pinyin, there are not any words starting with i, u, or v. :-(

Regarding U, the pronunciation is /u:/ in English, but it has to use together with w, like wu. 
There are several alternatives.
1. use some words having the pronunciation /u:/, like Wu Zhen[1], a very beautiful town close to Shanghai.
2. use some words starting with U, but not really Chinese, like Urumqi, Ulanhot, which are city names in China.

Yup, if there isn't anything that naturally fits with the establish
criteria we'd just have a number of items that are 'exceptional' and get
