this installer may help you
 https://github.com/otzoran/openstack-grizzly-installer
it's in the "all-in-one" subdir but supports multi-node installation, it
was tested on virtualbox and on bare-metal so i guess it will fit.
i didnt try it with one NIC only, but you're welcome to test it:
edit openstack.conf and set PUBLIC_INTERFACE, PRIVATE_INTERFACE to the same
iface, and adjust the interfaces file accordingly.
