>From a European perspective, this is preferable for me since I could
never attend the 21:00 UTC slot. I don't know how it works for the
folks on the US west coast or in China though.

Do you mean move all meetings to office hours or just the one in the US
timezone? Personally, I'd like to have a regular meeting with an agenda
at least every couple of weeks.
